College to host barbecue class Saturday1/28/2010
The Pulaski Technical College Arkansas Culinary School will host "Barbecue 101," a cooking class featuring champion barbeque chef Troy Black on Saturday, Jan. 30 in the PTC Campus Center on the main campus.
The class runs from 10 a.m.-12:30 p.m. and will be followed by a barbecue dinner from 1-3 p.m. The cost of the one-day class is $60.
Chef Black competes full-time on the professional barbecue circuit and has been featured on The Food Network and the Travel Channel. His presentation will include recipes and tips for meat selection, low and slow cooking, using wood for flavorings, cooking techniques and creating sauces and dry rubs.
