The Pulaski Technical College Arkansas Culinary School provides an intensive, comprehensive course of study in the culinary arts. The programs are designed to prepare students for professional careers in the food service industry. The courses integrate classical and modern culinary techniques with strong kitchen management skills. The PTC Culinary Arts programs emphasize procedures as well as the evolution and diversity of the culinary arts. Students in these hands-on programs will master preparation of breads, pastries, desserts, appetizers, soups, sauces, garde manger, charcuterie and entrees. They learn to identify, fabricate and portion meats, poultry and seafood. In addition to practicing modern and classical techniques, the programs provide students with professional kitchen management knowledge. They learn essential skills such as appropriate sanitation, hygiene and safety procedures, cost control management and styles of table service.
