Level II
(Students must complete Level I before taking Level II)
Dates: August 3–7, 2015

Children and aspiring chefs entering grades 5-12 are invited to join Chef Cynthia Malik, Chef Suzanne Campbell, Chef Jolie Mosley, and staff at Central Arkansas’ premiere culinary institute. Students spend five days honing their skills by rotating through stations in the kitchen including starters, snacks and breakfasts, entrées, and desserts. Through these stations, they will learn knife skills, how to make soups, stocks and sauces, cooking methods, meat and seafood cookery, vegetable, fruit, bean and grain cookery, and basic baking and pastry techniques. Students will also learn the importance of cleaning and sanitizing and will rotate through stations where they will gain basic knowledge of how to maintain a clean kitchen. Life skills such as teamwork, dependability, communication skills, organization, nutrition and leadership skills will be emphasized.

Chef coats and hats will be provided, along with a recipe packet that includes all menu items the students have prepared. Students will feast on the nutritious meals they prepare, including breakfast, snack and lunch. On the last day of camp students will invite two guests to attend a luncheon, and they will prepare and serve a three-course meal reflecting the skills they have learned throughout the week.

Students are encouraged to attend the orientation where they will receive their chef coats and hats, take a tour of the kitchen, be assigned to groups and receive a brief overview of the camp.

Students returning from camp last summer and students who complete Level I this summer are eligible to enroll in the Level II camp in August. Level II students will continue honing their knife skills and learn more advanced fundamentals of cooking and baking.

Registration is NOT complete until application and payment are received and is on a first-come, first-served basis. Registration is $250 per student, per session. Payment is due in full at the time of application. Space is limited to 20 youth chefs for Level I sessions and 16 youth chefs for the Level II session. Deadline to turn in application and fee is June 30, 2015. No refunds will be given after June 30, 2015.
